Faye's recipe Ingredients:
5 cups rhubarb, cut in 1/2 inch pieces |
1 3/4 cups sugar |
1 tablespoon flour |
1/4 teaspoon salt |
1 1/2 teaspoons grated orange rind |
3/4 teaspoon orange rind, ungrated |
4 cups small bread cubes |
1 orange, cubed |
1/2 cup flaked coconut |
1/2 cup melted oleo |
Directions:
1. MIX RHUBARB, SUGAR, FLOUR, SALT, GRATED ORANGE RIND IN A BOWL. 2. ADD 2 CUPS OF BREAD CUBES AND 1/4 CUP MELTED OLEO TO ABOVE MIXTURE. 3. PUT IN 8 X 8 X 2 BAKING PAN. 4. COMBINE REMAINING BREAD CUBES, BUTTER 3/4 TSP ORANGE RIND, ORANGE CUBES, AND COCONUT. 5. PUT ON TOP OF CAKE AND BAKE AT 375 DEGREES FOR 40 minutes. 6. SERVE WARM. |
