My dad loves rhubarb, so we always had it in different recipes. This is one of his favorites. Ingredients:
3 cups sugar |
1 1/3 cups oil |
2 eggs |
2 cups buttermilk |
2 teaspoons salt |
2 teaspoons baking soda |
2 teaspoons vanilla |
5 cups flour |
3 cups rhubarb, diced |
1 1/2 cups sugar |
3 tablespoons butter or 3 tablespoons margarine, melted |
3 teaspoons cinnamon |
Directions:
1. Beat together the following ingredients - sugar, oil, eggs, buttermilk, salt, baking soda, vanilla, flour. Add rhubarb. 2. Put 1/2 dough in 3 loaf pans (don't overfill!) and add half of topping. 3. Add other half of dough, then the rest of the topping. 4. Bake at 350 for 1 1/2 hours. |
