My friend Marie made this. It is great. It has a nice topping. It is another thing to do with rhubarb. Ingredients:
1 1/2 cups brown sugar |
2/3 cup oil |
1 egg |
1 teaspoon baking soda |
1 cup buttermilk |
1 teaspoon salt |
1 teaspoon vanilla |
2 1/2 cups flour |
1/2 cup nuts, chopped |
1 1/2 cups rhubarb, diced |
1/2 cup sugar |
1 tablespoon butter |
1 teaspoon cinnamon |
Directions:
1. Preheat the oven to 325°F. 2. Grease two loaf pans. 3. Dice the rhubarb and chop the nuts. 4. Mix everything, except the topping ingredients, together in a large bowl. 5. Mix well and pour into prepared loaf pans. 6. Topping: Mix the topping ingredients together and sprinkle over the top of the batter. 7. Bake for 60 minutes, taking care not to overbake. This was in big letters so it must be a problem to watch out for lol. |
