Recipe taken from Times The Table from Thurs. 06/05/10. Mother in Law made it with Rhubarb instead of Apples. Delicious! Ingredients:
5 oz (atora) suet |
4 stalks rhubarb |
6 oz sugar |
12 oz bread crumbs |
Directions:
1. Layer bottom of an oven proof dish with Shredded suet. 2. Add a layer of thinly sliced Rhubarb (or Apples), then a layer of sugar to taste. 3. Add a layer of breadcrumbs 4. Add another layer of Rhubarb (or apples), sugar and breadcrumbs. 5. Press Firmly down and cook on a middle shelf at 190C/gas mark 5. 6. Test with a knife when the rhubarb/apples are cooked and the top is crisp. The bottom layer of rhubarb/apples develops a delicious toffee consistency. 7. Add extra sugar for Rhubab-to take more of the sour/bitterness out. |
