I'm not a big fan of rhubarb,but I do like this! Ingredients:
4 cups rhubarb,chopped fine |
1 cup sugar |
1 teaspoon orange peel,grated |
1/2 cup fresh orange juice |
1/2 cup corn syrup |
2 egg whites |
2 tablespoons sugar |
orange liqueur |
Directions:
1. In pan,combine rhubarb,1cup sugar,orange peel,orange juice and corn syrup. 2. Heat to boil point,stirring all the time. 3. Reduce heat and cook about 12 minutes until rhubarb is tender. 4. Cool. 5. Pour mixture into pan,place in freezer until of slush stage,about 2 hours. 6. Beat egg whites until frothy,then slowly add the 2 Tablespoons of sugar,beat until stiff peaks. 7. In large bowl spoon the frozen rhubarb mixture,beat until frothy. 8. Fold in the egg whites. 9. Place in freezer,coverd,stir occasionally and leave until firm about 6 hours. 10. Allow to soften a bit,spoon into clear glass servers. 11. Drizzle with Orange Liqueur. 12. Serve with your best Cookie. |
