this is a medly of colors and flavors... looks as good as it tastes... sits well with hearty meats hot or cold... cant recommend this highly enough... served to me last night by the rev mr p larking along with beets and squash cubed and roasted together which you also should try both for color and flavor... the guy coulda been a chef... note...the prep and cooking time over lap Ingredients:
5 large potatoes, boiled cubed still warm (i never peel spuds...your choice) |
1 large red onion, course chopped |
1/4 red capsicum, slivered (sweet pepper) |
1/4 yellow capsicum, slivered (sweet pepper) |
1/2 cup chopped parsley |
1/2 cup chopped coriander (cilantro) |
3 tablespoons capers packed in salt |
3 tablespoons olive oil |
2 tablespoons sesame oil |
2 lemons, juice and zest course grated (or limes) |
salt and pepper |
