These saucy meatballs are perfect for picnics, reunions, and family get-togethers. Ingredients:
2 eggs |
1 envelope onion soup mix |
1/2 cup seasoned bread crumbs |
2 tablespoons chopped fresh parsley |
1 1/2 pounds lean ground beef |
1 (16 ounce) can whole berry cranberry sauce |
3/4 cup ketchup |
1/2 cup beef broth |
3 tablespoons brown sugar |
3 tablespoons finely chopped onion |
2 teaspoons cider vinegar |
Directions:
1. Combine eggs, soup mix, bread crumbs, and parsley in a large bowl. Crumble beef over mixture and mix well; shape into 1-inch balls. 2. Place 12 to 14 balls on a microwave-safe plate; cover with waxed paper. Heat in microwave on high until no longer pink, 3 to 4 minutes; remove to paper towels to drain. Repeat with remaining meatballs. 3. Combine cranberry sauce, ketchup, beef broth, brown sugar, onion, and vinegar in a microwave-safe dish. Cover with waxed paper and heat in microwave on high until heated through, 3 to 4 minutes. Serve sauce with meatballs. |
