Great appetizer sized reubens on crunchy baguettes. From First. Ingredients:
1/2 c mayonnaise |
1 tbs. apple cider vinegar |
2 tsp dijon mustard |
1/2 tsp sugar |
4 c coleslaw mix |
1/4 c chopped red onions |
1/2 c thousand island dressing |
1 baguette |
3/4 lb. sliced pastrami |
11/2 c shredded swiss cheese |
Directions:
1. Heat oven to 350. In large bowl,whisk together mayonnaise,vinegar,mustard and sugar until blended. Season with 1/2 tsp salt,if desired.. add coleslaw mix and red onions;toss gently to coat. 2. Divide dressing evenly among baguette slices(about 2 Tbs.ea.);place on baking sheet. Divide coleslaw mixture and pastrami evenly among baguette slices. Sprinkle evenly wit Swiss cheese. Bake 5 mins.,or until cheese is melted. Garnish with red pepper curls,if desired |
