Tastes like a mini Reuben sandwich. Differs slightly from most Reuben dip or spread recipes because of the addition of the caraway seeds. Ingredients:
1 lb sauerkraut, well drained |
1 small onion, chopped |
1/2 to 1 teaspoon caraway seeds |
1/2 cup mayo |
1/2 cup thousand island dressing |
8 oz shredded corned beef |
1 lb shredded swiss cheese |
cocktail rye bread for serving |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Mix sauerkraut, onion and caraway seeds. Spread mixture into a 9x13-inch baking dish. 3. In a small bowl, combine mayonnaise and dressing. 4. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut. 5. Bake for 20 to 25 minutes. 6. Serve with cocktail rye bread. |
