From Rose Hill Extension Club, Chadron, Nebraska cookbook. Recipe submitted by Winona Brecht. Ingredients:
1 (3 ounce) package cream cheese |
1 (16 ounce) can sauerkraut (well drained and chopped) |
1 (5 ounce) can evaporated milk |
1 teaspoon minced onion |
1 (12 ounce) can corned beef |
1 cup rye cracker crumbs |
1 cup all-purpose flour |
1 cup thousand island dressing, for dipping (optional) |
Directions:
1. Mix cheese and onion, add kraut, corned beef and 1/4 c crumbs. 2. Roll into balls the size of walnuts; roll in flour and dip in evaporated milk, then roll in the rest of the cracker crumbs. 3. Bake in the oven 15-20 minutes at 350*F. |
