This is a nice way to use left over corned beef. Tasty and hearty! Ingredients:
4 large paking potatoes |
2 c finely diced cooked corned beef |
1 can sauerkraut(14 oz)rinsed,well drained and finely chopped |
1/2 c shredded swiss cheese |
3 tbs sliced green onions |
1 garlic clove,minced |
1 tbs prepared horseradish |
1 tsp caraway seeds |
1 pkg (3oz) cream cheese,softened |
3 tbs grated parmesan cheese |
Directions:
1. Bake potatoes at 425 for 45 mins. or till tender. Cool. In a bowl,combine the corned beef,sauerkraut,Swiss cheese,onions,garlic,horseradish and caraway. Cut potatoes in half lengthwise. Carefully scoop out potatoes,leaving shells intact. 2. Mash potatoes with cream cheese;stir in corned beef mixture. Mound potato mixture into the shells. Sprinkle with parmesan cheese and paprika. Return to the oven for 25 mins or till heated through. |
