I needed an easy Potato Salad recipe for 200. I found this recipe on . Besides tasting great, the web site lets you scale recipes to different serving amounts. I made this in 4-48 serving batches to create 3-2 steam table pans full. Read more . Not a bit was left over! Ingredients:
2 pounds russet potatoes |
1 cup mayonnaise |
4 teaspoons sweet pickle relish |
4 teaspoons white sugar |
1/4 cup chopped white onion |
2 teaspoons prepared mustard |
1 teaspoon white wine vinegar |
1/4 cup minced celery |
1 teaspoon minced pimento (or sun-dried tomatoes) |
1/2 teaspoon shredded carrot |
1/4 teaspoon dried parsley |
2 teaspoons chili powder |
1/4 teaspoon ground black pepper |
salt to taste |
Directions:

Drain, cool and chop. 3. In a large bowl, combine all the other ingredients. 4. Mix well, chill and serve. 5. Best if made day ahead |
