I needed an easy Potato Salad recipe for 200. I found this recipe on . Besides tasting great, the web site lets you scale recipes to different serving amounts. I made this in 4-48 serving batches to create 3-2 steam table pans full. Read more . Not a bit was left over!
Ingredients:
2 pounds russet potatoes
1 cup mayonnaise
4 teaspoons sweet pickle relish
4 teaspoons white sugar
1/4 cup chopped white onion
2 teaspoons prepared mustard
1 teaspoon white wine vinegar
1/4 cup minced celery
1 teaspoon minced pimento (or sun-dried tomatoes)
1/2 teaspoon shredded carrot
1/4 teaspoon dried parsley
2 teaspoons chili powder
1/4 teaspoon ground black pepper
salt to taste
Directions:

2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
3. In a large bowl, combine all the other ingredients.
4. Mix well, chill and serve.
5. Best if made day ahead
