A swanky name for a really simple dish. Excellent to show off at brunch with. Just don't tell them how ridiculously simple it is. Ingredients:
6 eggs |
1/2 c. chopped ham |
1 onion, diced |
3 mushrooms, sliced |
2 tbsp butter |
2 tbsp flour |
1/2 c. chicken stock |
1/2 tsp salt |
1/2 tsp pepper |
Directions:
1. Melt the butter with the flour, make a roux. 2. Add the stock and stir until boiling. 3. Add the mushrooms, onion, salt and pepper. 4. Keep the mushroom/onion warm while poaching the eggs. 5. Dish teh eggs, strain the sauce over the eggs, and cover with the ham. 6. Serves great with rice or mashed potatoes. |
