This is a salad that a friend of mine makes (with some adjustments) that is always a hit for dinner parties. I have made it twice in the past week to rave reviews! Ingredients:
1 large head of iceburg lettuce - washed, drained, chopped |
1/2 onion, thinly sliced - i use red onion but yellow or white do well also |
2 tbsp. white sugar |
1/3 cup bacon bits (make your own or store bought) |
3/4 cups frozen peas |
1 1/2 cups shredded swiss cheese - i use reduced fat when i can find it |
1 1/2 (+ or -) reduced fat mayonnaise |
Directions:
1. In a deep salad bowl layer lettuce and onion. Sprinkle with sugar. Continue layering bacon, peas, and cheese. Then spread the mayo over the top, smoothing to the sides to seal it all together. Cover and put in the refrigerator for 24 hours. Toss before serving. Enjoy with most any meal! |
