Ingredients:
6 cup(s) all-bran cereal divided |
2 cup(s) water boiling |
1 quart(s) buttermilk |
2 cup(s) sugar |
1 cup(s) vegetable oil |
4 eggs |
5 cup(s) flour |
5 teaspoon(s) baking soda |
1 teaspoon(s) salt |
3/4 cup(s) raisins optional |
1 cup(s) pecans chopped, optional |
orange zest optional |
Directions:
1. Place 3 cups All-Bran cereal in a bowl and pour on boiling water. Set aside to soak. In a large bowl, beat together buttermilk, sugar, oil, and eggs. Add flour, baking soda, and salt. Mix well. Stir in soaked cereal and remaining 3 cups cereal. Store in canning jars or other airtight containers for up to 1 month in the refrigerator. 2. To bake, preheat oven to 400 degrees. Line muffin tins with paper cups or spray with nonstick coating. Fill muffin tins 2/3 full with batter and bake 20 minutes. 3. *Optional ingredients: Stir in raisins, chopped pecans, and/or the zest of 1 orange when mixing the dry ingredients together. |
