Refrigerator Bran Muffins |

This recipe has been in our family for many years and is our favorite. It is not your typical dry bran muffin. It is very Moist and tasty. Ingredients:
2 cups bran flakes |
4 cups kellogs all-bran cereal |
2 cups boiling water |
2 2/3 cups granulated sugar |
1 cup shortening |
4 eggs, beaten |
1 quart buttermilk |
5 cups flour, not sifted |
5 teaspoons baking soda |
1 teaspoon salt |
Directions:
1. Pour boiling water over Bran cereal and cool. Cream together sugar and shortening in a large bowl, then add the remainder of ingredients. Pre-heat oven to 400 degrees. Bake for approximately 15 minutes, depending on the size of your muffins it may take longer. The batter can be refrigerated for up to 1 month. If you like you can add additional ingredients - I like to add Dates, and sometimes some Walnuts. A friend of mine recently suggested using boiling Apple Juice in place of the water for a different flavor, I plan on trying that the next time I make the batter. You could also add Raisins, Cinnamon, Chocolate Chips, Dried Cranberrys - whatever your taste is. I also like these muffins cold better than hot. I am not sure just how many muffins can come out of this recipe, but it makes quite alot. |
