Refrigerator Bran Muffins |

I found this recipe in an old church cookbook. My family loves them! Ingredients:
1 (10 ounce) package raisin-bran cereal |
5 cups flour |
2 1/2 cups sugar |
5 teaspoons baking soda |
2 teaspoons salt |
1 quart buttermilk |
1 cup oil |
4 eggs |
Directions:
1. Mix all together in a large bowl. 2. Cover batter and store in the refrigerator until ready to use. 3. Preheat oven to 400°F. 4. Grease and fill muffin cups 3/4 full and bake for 15 to 20 minutes, until toothpick inserted comes out clean. 5. Mixture can be stored in an airtight container in refrigerator up to 6 weeks. 6. Variation: Before baking sprinkle a cinnamon and sugar mixture over each muffin. |
