Refried Beans (Curtis Aikens2)

Ingredients:
1 tablespoon vegetable oil
1 small onion, diced
1 garlic clove, minced
2 cups black beans (see recipe above)
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper or to taste
salt
1/2 cup grated jack cheese
Directions:
1. Heat vegetable oil in a medium ovenproof skillet and saute onion and garlic until translucent. Add beans with cooking liquid and mash with a fork or potato masher, or process in food processor. Stir in chili powder, cumin, cayenne pepper. Season with salt. Top with cheese and place under the broiler for about 3 to 5 minutes or until cheese is melted and bubbling.
