Refried Beans (Curtis Aikens2) |

Ingredients:
1 tablespoon vegetable oil |
1 small onion, diced |
1 garlic clove, minced |
2 cups black beans (see recipe above) |
1 teaspoon chili powder |
1 teaspoon cumin |
1/4 teaspoon cayenne pepper or to taste |
salt |
1/2 cup grated jack cheese |
Directions:
1. Heat vegetable oil in a medium ovenproof skillet and saute onion and garlic until translucent. Add beans with cooking liquid and mash with a fork or potato masher, or process in food processor. Stir in chili powder, cumin, cayenne pepper. Season with salt. Top with cheese and place under the broiler for about 3 to 5 minutes or until cheese is melted and bubbling. |
