Ingredients:
1/2 cup olive oil |
1/2 cup diced onions |
2 tablespoons chopped garlic |
2 tablespoons ground coriander |
1 tablespoon ground cumin |
2 (16-ounce) cans drained, rinsed black beans |
1 cup water |
1/4 cup chopped cilantro with stems |
salt and pepper |
Directions:
1. Heat skillet. Add olive oil, onion, garlic, coriander, cumin, and saute until you start to smell the spices. Add beans and 1 cup of water. Let simmer for 15 minutes then start pressing the beans with a potato masher. Add cilantro, salt and pepper and allow to simmer for another 20 minutes. Add water when needed until you reach desired |
