Refried beans. Super easy. What more can I say? Oh, delicious, too. From Goya, I think. Ingredients:
1 (15.5 ounces) can pinto beans, undrained |
1 tbs olive oil |
1/4 small onions, diced |
2 cloves garlic, minced |
salt and pepper |
2 tbs crumbled fresh cheese or shredded monterey jack cheese |
Directions:
1. Mash beans with fork or spoon. 2. Heat oil in a skillet on medium. 3. Add onion and garlic to skillet and cook until tender. 4. Add beans, salt and pepper and cook, stirring often, until bean liquid starts to evaporate. 5. Reduce heat and simmer until desired consistency, about 5 minutes. 6. Sprinkle cheese over and serve. |
