This is a great way to get protien in a low fat way. Full of fiber and good nutrition. Enjoy in healthy wrap, burrito, or as a dip. If you don't mash the beans and leave out the spread to add beans to soups and salads. Ingredients:
2 1/2 cups of dry pinto beans (about 1 lb or 450gm) |
3 quarts of water |
1/2 cup chopped onion (optional) |
2 tbls smart balance 67% buttery spread |
1/4 cup water |
Directions:
1. Clean the dried beans and rinse. 2. put in a pan with the 3 quarts of water. 3. bring to a boil, and boil for 2 1/2 hours until beans are soft and skin begins to crack. 4. strain water off of beans. 5. In a skillet saute onions until tranlucent. 6. add beans and mash 7. add smart balance spread 8. add water as needed to keep beans from drying out. |
