Ingredients:
16 ounces pinto beans or 16 ounces dry red beans |
1 large onion, quartered |
3 cloves garlic |
1/2 teaspoon ground cumin |
3 -4 drops hot pepper sauce |
Directions:
1. Place beans in a dutch oven, add water to cover by 2 inches. 2. Bring to a boil; boil for 2 minutes. 3. Remove from the heat; cover and let stand for 1 hour. 4. Drain beans; discard liquid. 5. Return beans to pan; add water to cover. 6. Add onion and garlic; bring to a boil. 7. Cover and cook over low heat for 2 hours or until beans are very tender, adding water to keep covered if needed. 8. Discard onion and garlic. 9. Mash beans with a potato masher, leaving some beans whole. 10. Stir in cumin and hot pepper sauce. |
