When I make this recipe I usually just use the beans, broth and salsa. Sometimes, however, it's just fun to spice it up. 1 point per serving for Weight Watchers. This recipe is core. Ingredients:
2 teaspoons olive oil |
1 large onion, chopped |
1 medium green pepper, chopped |
2 teaspoons garlic, minced |
1 (14 ounce) can refried beans |
1 (5 ounce) can corn |
1 (14 1/2 ounce) can chicken broth |
1 (16 ounce) jar salsa |
1 (15 ounce) can black beans |
1 (15 ounce) can kidney beans |
1/2 teaspoon cumin |
Directions:
1. Heat oil. 2. Add onion and green pepper. 3. Cook until tender. 4. Add garlic, broth, salsa and corn. 5. Raise heat to medium high and bring to a boil. 6. Rinse beans and add to the pot. 7. Bring back to a boil. 8. Stir in refried beans and cumin. 9. Stir well and simmer. |
