Refreshing Lemon Chutney or Sauce |

This produces more of a sweet, thick drizzling sauce, similar in consistency to sweet chilli sauce, then a chutney. The method is simple, and the results are very tasty. This goes great with grilled chicken or fish. Ingredients:
12 large fresh lemon |
3 -4 white onions |
500 g caster sugar |
500 ml distilled white vinegar |
1 pinch salt |
Directions:
1. Use a citrus peeler to remove the fine peel, avoiding any pith. Set to one side. 2. Discard the pith and seeds, and finely mush the fruit flesh. 3. Chop the onions finely. 4. Add onions and lemon to a deep, hot pan and cook for just a few minutes, stirring to prevent sticking. 5. Once onion turns translucent, add the sugar and vinegar, the salt and the fine peel. 6. Cook on a medium heat, stirring gently, until the micture reduces and forms a thick sauce. 7. Pour into sterilised, preheated jars and seal for at least 1 month before using. |
