Cool and refreshing with a wonderful Filipino surprise - coconut gel! This is available in 12 ounce jars at Asian supermarkets - get a couple of jars because you will really like it! Ingredients:
1 1/2 pints whipping cream, whipped |
3 tablespoons confectioners' sugar |
44 ounces mandarin orange sections, canned, drained |
12 ounces coconut gel, drained & rinsed |
3 cups pineapple, drained if canned |
2 cups shredded sweetened coconut |
1 1/2 cups macadamia nuts, chopped roasted canned |
Directions:
1. Whip cream with confectioner's sugar in large chilled bowl. 2. Mix next 4 ingredients & fold into whipped cream. 3. Chill thoroughly, at least an hour; confectioner's sugar helps stabilize whipped cream. If planning to keep overnight, stabilize whipped cream with gelatin. 4. Stir in nuts just before serving. |
