This recipe is so good that it'll cause reelin' and rockin' with every bite! A little spicy, but not sassy. You will love the smooth texture of the eggs, milk, and cheese! Ingredients:
4 4-ounce cans diced mild or hot green chili peppers, drained |
1 cup shredded sharp cheddar cheese (4 ounces) |
1 cup shredded monterey jack cheese (4 ounces) |
2 cups evaporated milk |
4 eggs |
1/3 cup all-purpose flour |
1 teaspoon salt |
2 avocados, seeded, peeled, and sliced |
Directions:
1. Preheat oven to 350. In a greased baking dish, layer chili peppers, cheddar cheese, and Monterey Jack cheese. In a blender container, combine evaporated milk, eggs, flour, and salt. Cover and blend until well combined. Pour over chili peppers and cheese. bake about 45 minutes or until a knife inserted near center comes out clean. Before serving, top with avocado slices. Makes 6-8 servings. |
