Reduced Sugar Pumpkin Bread |

I've reduced the sugar and adapted the flours to make this gluten free. Ingredients:
1 cup gluten-free flour |
1 teaspoon xanthan gum |
1 teaspoon baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 cup pumpkin |
2 teaspoons liquid stevia |
1/4 cup milk |
1 egg |
1/8 cup olive oil |
1/2 cup nuts, chopped |
Directions:
1. Mix together flour, powder, soda, salt and spices. 2. Combine pumpkin, sugar, milk and eggs. 3. Add dry ingredients and butter; mix until well blended. 4. Stir in nuts. 5. Pour into well greased loaf (9x5x3 ). Bake at 350 degrees for 45-55 minute. |
