a great way to use leftover rice! Ingredients:
1 1/4 cups whole wheat flour |
2 tablespoons brown sugar |
2 teaspoons baking powder |
2 eggs |
2/3 cup skim milk |
1/4 cup applesauce |
1/4 teaspoon vanilla extract |
1 cup basmati rice, cooked |
Directions:
1. Stir first three ingredients together, set mixture aside. 2. Beat remaining ingredients, stirring rice in last. 3. Combine two mixtures just until moistened. 4. Spoon into 12 muffin cups. 5. Bake at 440° F for 20 minutes. |
