REDUCED FAT PINEAPPLE RIGHT SIDE UP CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dorsett Estate in Richardson, Texas in 1986. Ingredients:
1/2 cup unsweetened applesauce |
8 ounce can crushed pineapple drained and reserve juice |
1/3 cup skim milk |
1/3 cup egg beaters |
1/2 teaspoon vanilla |
1-3/4 cup flour |
1/3 cup sugar |
2 teaspoons baking powder |
1/4 cup brown sugar |
Directions:
1. Preheat oven to 350 then spray square cake pan with cooking spray. 2. Stir together applesauce, reserved pineapple juice, milk, egg substitute and vanilla. 3. Combine flour, white sugar and baking powder then stir wet ingredients into dry ingredients and spread in the pan. 4. Sprinkle top of batter with crushed pineapple. 5. Sprinkle brown sugar over the pineapple. 6. Bake for 30 minutes then cook 10 minutes sand serve warm. |
