These are the redhead cousins to the blondies and brownies in the world – caramelly sweet with the fruity undertones of banana and carrot, accented just so with a smattering of chocolate chips and nuts for added decadence. Ingredients:
1/4 cup light margarine |
2/3 cup light brown sugar |
1 tsp vanilla |
1 medium, over-ripe banana, mashed |
1 cup flour |
1 tsp baking powder |
1/2 tsp salt |
1 cup grated carrots |
1/3 cup chopped chocolate (or chocolate chips) |
Directions:
1. Preheat oven to 350, grease an 8 square pan. 2. Beat margarine, sugar, vanilla and banana. 3. Stir in remaining ingredients except chocolate. 4. Sprinkle chopped chocolate over mixture. 5. Bake for 30 minutes. |
