Red Yellow Orange And Green Heirloom Tomato Salad |

This is the ultimate tomato lovers salad! Heirloom tomatoes are so full of flavor they need little embellishing. I sometimes add a sprinkle of mozzerella, feta, or blue cheese and chopped kalamata olives just before serving. Ingredients:
3 lbs heirloom tomatoes (red, yellow0, orange and green) |
2 t red wine vinegar |
1 t dijon mustard |
salt |
fresh ground black pepper |
1/3 c extra virgin olive oil |
1-2 large bunches arugula, stemmed, or mixed green such as mesclun (enough to make 8 cups) |
Directions:
1. Cut Tomaotes lienghtwise into 1/2-inch thick wedges. 2. Place in a largenonreactive bowl and set aside. 3. Whisk vinegar, mustard, 3/4 teaspoon salt, and several grinds of pepper together in a small bowl. 4. Gradually whisk in olive oil. 5. Pour half of this mixutre over the tomatoes and marinate for 10-15 minutes. 6. When ready to serve, toss arugula in a mixing bowl with enough of the remainging dressing to just coat lightly. 7. Taste and season with more salt and pepper if needed. 8. Use a large ceramic or glass platter, and mound greens in the center 9. Taste the tomatoes and season with more salt and pepper if needed 10. Using a slotted spoon, arrange a border of tomatoes around the greens. 11. Serve immediately. |
