Red, Yellow and Black Chili |

This is something I came up with when I was feeling lazy about cooking dinner one night (again). Cumin powder and Nutrella can be found in Indian grocery stores. I love cumin so I use a lot of it- but please adjust to your taste. Bon Appetito! Ingredients:
2 garlic cloves |
1/4 teaspoon ground red pepper (hot) |
2 tablespoons oil |
1 (28 ounce) can vegetarian baked beans |
1 (14 ounce) can black beans, drained |
1 (14 ounce) can diced tomatoes |
1 medium yellow bell pepper |
1 tablespoon cumin powder (not cumin seeds!) |
2 teaspoons morton lite salt |
1/2 ounce taco seasoning |
1 medium green chili pepper (adjust to taste) |
1/2 lb ground beef, browned, optional or 1 cup textured soy protein granules |
Directions:
1. In large pot, on medium heat, add oil. 2. Crush garlic cloves and add to oil, add chli powder and let sizzle few seconds. 3. Chop yellow pepper roughly and add to oil. 4. Add tomatoes, and cumin, cook few minutes. 5. Add baked beans, and black beans, salt, taco seasoning, and beef OR soy granules if using. 6. Slit green chili pepper and add (If you want it less spicy, de-seed the pepper first). 7. Let simmer 15-30 minutes,to desired consistancy. 8. Enjoy alone or with torn pieces of good thick bread. |
