A good use of the healthiest winter vegetables. Goes well next to red meet and a red wine. Decorative as the red beet paints the other vegetables while baking together. Makes you feel strong the next day. Ingredients:
red beet |
carrots |
cauliflower |
garlic |
shallots |
olive oil |
pinch of salt |
Directions:
1. Peel the beet, carrots and cauliflower 2. cut each beet in two or three pieces, you don't want them too small 3. same for the carrots 4. cut the cauliflower into matching sized pieces 5. cut off the tips of the garlic and the shallots, do not peel 6. toss all into a baking bowl 7. add the olive oil and the salt 8. cover the top of the bowl 9. bake in preheated oven of 250 degrees Celcius for 120 min |
