Red Wine Marinade For Game |

Red wine used as a marinade for wild game not only tenderizes the meat, but it heightens the flavor of it. Ingredients:
4 oz carrots chopped fine |
4 oz red wine vinegar chopped fine |
4 each onion |
25 each cloves |
2 tsp dried thyme |
4 each bay leaves |
2 tsp red wine |
1 tsp garlic cloves, crushed crushed |
4 each parsley stems |
8 fl oz dried ground sage |
2 qt peppercorns |
Directions:
1. Combine all ingredients in a nonreactive container (e.g. stainless steel, glass, plastic; do not use aluminum). 2. Marinate meat as desired or as indicated in recipe. 3. Marinating times may vary from a few hours to several days. 4. After marinating, use the liquid as a cooking medium and as the base for a sauce. |
