Red, White & Orange Saucy Salad |

This makes a great light meal. Serve with hard bread or crackers. The cooking time is the approximate chill time Ingredients:
3 navel oranges, peeled,sliced and quartered |
1 1/2 cups shredded carrots |
1 (15 1/2 ounce) can red kidney beans, rinsed and drained |
1 (15 1/2 ounce) can great northern beans, rinsed and drained |
1/3 cup fresh parsley |
1/3 cup green pepper, chopped |
1/4 cup tarragon vinegar |
2 tablespoons balsamic vinegar |
6 packets equal sugar substitute |
12 lettuce leaves |
salt and pepper |
Directions:
1. In a large non-metallic bowl, combine oranges, carrots kidney beans and Great Northern beans. 2. Cover and chill well. 3. In a medium bowl, combine all remaining ingredients, except lettuce. 4. Cover and chill well. 5. Lightly toss dressing with the orange, carrot and bean mixture. 6. Add salt and pepper to taste. 7. Let stand to blend flavors. 8. Serve over lettuce leaves. |
