Ingredients:
1 small bunch radish, trimmed
1 medium turnip, peeled
1 small cucumber, halved and seeded
4 tablespoons rice wine vinegar
1 tablespoon sugar
4 tablespoons chopped fresh mint
salt and pepper
Directions:
1. Finely dice the radishes, turnip and cucumber.
2. Combine with the remaining ingredients and 4-6 tablespoons of water in a bowl.
3. Chill before serving.
