Red, White And Greens With Spicy Lime Dressing |

A nice summer salad that combines sweet, ripe strawberries with crisp baby greens, and smooth goat cheese. Topped off with crunchy almonds and an easy sweet and spicy dressing, this salad is pretty and tasty but very easy. Ingredients:
1 bag mixed baby greens |
6oz goat cheese(chevre), crumbled |
1pt fresh strawberries, hulled and sliced |
2 green onions, sliced |
1/2 cup flavored almonds(i used chili lime made by planters, but you could also use a sweet variety, if you'd rather) |
spicy lime dressing |
1/2 cup dressing quality olive oil |
2 limes(juice and zest) |
2t honey |
1tsp chili powder |
1tsp cumin |
1/2-1tsp cayenne(to taste) |
2 cloves garlic, minced |
salt and pepper |
Directions:
1. Combine all dressing ingredients other than oil in medium glass bowl. 2. Whisk to combine. 3. Slowly add olive oil, whisking constantly, to incorporate. 4. Arrange greens on individual plates or large serving dish. Top with sliced strawberries and green onions. 5. Add crumbled goat cheese and top with almonds 6.
