Moist and delicious cupcakes with cocoa and sour cream and cream cheese frosting. Ingredients:
21/2c flour |
1/2c cocoa powder |
1tsp. baking powder |
1/2tsp salt |
1c butter,softened |
2c sugar |
4 eggs |
1c sour cream 1/2c milk |
1 bottle(1oz) red food color |
2tsp vanilla |
vanilla cream cheese frosting |
1 pkg.(8oz)softened cream cheese |
4tbs.softened butter |
2tbs sour cream |
2tsp vanilla extract |
1 box confectioners' sugar |
Directions:
1. Mix flour,baking soda,and salt. Beat butter and sugar in large bowl with electric mixer on med. speed 5 mins or till light and fluffy. Beat in eggs,1 at a time. Mix sour cream,milk food color and vanilla.. Gradually beat in flour mixture on low speed until just blended. Spoon batter into paper-lined muffin cups,filling each cup 2/3 full. 2. Bake in preheated 350 oven for 20 to 25 mins. Cool in pans 5mins. Remove from pans;cool completely. Spread with frosting. 3. Frosting: Beat cream cheese,softened butter,sour cream and vanilla in large bowl till light and fluffy. Gradually beat in confectioners' sugar on medium speed till smooth. |
