Red Velvet Cake With Cream Cheese Frosting |

This is a different version of the old traditional Red Velvet- courtesy of McCormick. Haven't made it yet, saving it for Christmas! Sounds like it would be much moister than the old one. Ingredients:

2 1/2 c. flour |
1/2 c. cocoa powder |
1 tsp baking soda |
1/2 tsp salt |
1 cup butter, softened |
2 c. sugar |
4 eggs |
1 c sour cream |
1/2 c milk |
1 bottle (1 oz.) red food color |
2 tsp. pure vanilla |
frosting |
1 8 oz. pkg. cream cheese |
1/2 stick butter |
2 tbsp. sour cream |
2 tsp. pure vanilla |
1 lb. confectioner's sugar |
Directions:
1. Cake: 2. Sift flour, cocoa, baking soda, and salt. Set Aside. 3. Beat butter and sugar in large bowl on high speed for 5 - 7 min, until light and fluffy. 4. Beat in eggs, 1 at a time. 5. Mix in sour cream, milk, food color, and vanilla. 6. Gradually beat in flour mixture on low speed just until blended. 7. Do not overbeat. 8. Pour batter into 2 greased and floured 9 in. round cake pans. 9. Bake in preheated 350 degree oven 35 to 40 min. or until tests done with toothpick. 10. Cool 10 min., remove from pans, and cool completely on wire racks. 11. Fill and frost . 12. Frosting: 13. Beat cream cheese, butter, and sour cream until smooth. 14. Mix in vanilla extract. 15. Gradually beat in the confectioner's sugar on medium speed til light and fluffy. |
