I love red velvet cake. I tried several recipes but they didn't come out like the one Nana made for us when we were in Middle School. I love her Southern Cooking. She was such a pretty and sweet old lady. She made the best homemade bread and I remember her working so hard in the cafeteria to feed us hungry kids lunch and everything was fresh. I found this recipe on the net with over 1000 reviewers and all gave this recipe a 4 1/2 stars. But haven't gotten a chance to try it yet. Hopefully it will be like Nana's. Ingredients:
1/2 cup shortening |
1 1/2 cups sugar |
2 eggs |
1 teaspoon vanilla |
1 teaspoon butter flavoring |
1 1/2 ounces red food coloring |
3 tablespoons cocoa |
2 1/2 cups sifted cake flour |
1 cup buttermilk |
1 teaspoon salt |
1 tablespoon vinegar |
1 teaspoon baking soda |
2 (3 ounce) boxes cream cheese, softened |
6 tablespoons butter, softened |
1 teaspoon vanilla |
2 cups sifted powdered sugar |
Directions:
1. Cream shortening, sugar, eggs, and flavors. 2. Make a paste of cocoa and food coloring. 3. Add to first mixture. 4. Alternately add flour and buttermilk. 5. Mix baking soda and vinegar in small bowl; add to batter., blend. 6. Bake in three 9 or 10 pans for 20 - 25 minutes at 350°. 7. Let cool completely. 8. For the frosting, blend all the ingredients until smooth. 9. Cover the cake with the frosting. |
