3 ripe tomatoes, peeled, seeded and roughly chopped |
1 red onion, diced |
1/2 cup loosely packed chopped cilantro |
1 jalapeno pepper, minced |
3 roasted garlic cloves |
1 lime, juice of |
1/4 cup red wine vinegar |
salt |
ground black pepper |
Directions:
1. Combine tomatoes, onion, cilantro, jalapeno, garlic, lime juice, and vinegar in blender. 2. Process on slow speed until desired consistency is reached. Add salt and pepper to taste. 3. Refrigerate to meld flavors. |
