Red Snapper With Yogurt/Cucumber Sauce |

Red Snapper has a great, firm texture and a sweet, nutty flavor that lends itself very well to everything from hot chilies to subtle herbs. And, of course, Red Snapper is excellent for grilling. Ingredients:
120 g red snapper |
2 tablespoons coriander |
2 tablespoons cumin |
2 tablespoons fresh ginger, ground |
salt and pepper |
1 teaspoon olive oil |
1 large cucumber, peeled and without seeds |
2 tablespoons unsweetened natural yoghurt |
1 lime, juice of |
salt and pepper |
1 tablespoon mint leaf |
2 tablespoons basil, finely chopped |
Directions:
1. Marinate the fish with the coriander, cumin, ground ginger, salt and pepper. 2. In a frying pan, seal the fish on both sides with the olive oil. 3. For the sauce: put all the ingredients in a mixer except for the basil. 4. Serve the fish, cover with the yogurt sauce and toss with the basil. |
