âA tangy orange sauce, seasoned with garlic and ginger, really brings out the best in these red snapper fillets,â says Barbara Nowakowski of Mesa, Arizona. Ingredients:
2 pounds red snapper fillets |
1/4 teaspoon salt |
1/8 teaspoon pepper |
2 garlic cloves, minced |
1 tablespoon butter |
3 tablespoons orange juice |
1 teaspoon grated orange peel |
orange sauce: |
1 garlic clove, peeled |
2 tablespoons butter |
3 tablespoons orange juice |
1/8 teaspoon ground ginger |
2 tablespoons minced fresh parsley |
Directions:
1. Place the fish in a single layer in a 13-in. x 9-in. baking dish coated with cooking spray; sprinkle with salt and pepper. In a small saucepan over medium heat, cook the garlic in butter for 1 minute; pour over fish. Drizzle with orange juice; sprinkle with orange peel. Bake, uncovered, at 400° for 10-15 minutes or until fish flakes easily with a fork. 2. In a small saucepan over medium heat, cook garlic in butter for 2-3 minutes or until golden brown; discard garlic. Stir orange juice and ginger into butter; heat through. Cut fish into serving-size pieces; drizzle with orange sauce and sprinkle with parsley. Yield: 6 servings. |
