RED RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huey Estate in Richardson, Texas in 1988. Ingredients:
5 slices market style bacon |
2 cups cooked rice |
3/4 cup chopped white onion |
2 cups canned tomatoes |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1/2 teaspoon hot pepper sauce |
Directions:
1. Cook bacon in skillet and reserve grease. 2. Crumble bacon and set aside then cook onions in bacon fat until tender. 3. Add remaining ingredients and bacon then cook on low heat for 40 minutes. 4. Stir often and add water as needed. |
