Made this for my mom's birthday. My 1 year old neice slurped it up with gusto. Also very yummy in strawberry. Can't wait to try it in peach. ** Do not use sugar free gelatin- it will never firm. I also recomend not using preprepared whipped cream. Ingredients:
2 (3 ounce) packages raspberry gelatin |
1 3/4 cups boiling water |
2 (10 ounce) packages frozen sweetened raspberries, thawed |
2 cups heavy whipping cream, whipped |
23 ladyfingers |
fresh mint |
raspberries |
additional whipped cream |
Directions:
1. In a large bowl, dissolve gelatin in boiling water. Stir in raspberrier. Refrigerate until partially thickened. Fold in whipped cream. 2. Arrange the ladyfingers with rounded side out around the sides of an ungreased 9-in. spring form pan. Carefully spoon raspberry mixture into pan. 3. Cover and refrigerate until firm. Garnish with mint, raspberries and whipped cream if desired. |
