This is a very tasty spread packed full of peppery flavor. Great on crackers as an appetizer or good on chicken, pork or seafood as a spread. Very tasty and very impressive. Ingredients:
2 red bell pepper |
1 medium size onion |
6 tablespoons lemon juice |
2 tablespoons extra virgin olive oil |
1 tablespoon red pepper paste |
1/2 teaspoon salt |
Directions:
1. Cut off the top of the red pepper. 2. Cut in half and discard seeds. 3. Set the oven to broil and preheat. 4. Place red pepper on an oven tray inside down and put in the oven. Roast for 15 minutes. 5. Place in a paper bag for 10 minutes so skins peel off easier. 6. Cut pper in strips then in small cubes 7. Cut onion same size as the red pepper. 8. Crush the onion with salt and red pepper paste. 9. Toss with roasted red peppers, lemon juice and olive oil. |
