Red Pepper Soup With Lime |

This is a beautiful soup to present as an appetizer or a nice light lunch. Perfect for Valentines Day! Ingredients:
4 fresh red bell peppers seeded and chopped |
1 large onion chopped |
1 tsp olive oil |
1 crushed garlic clove |
1 small red chili sliced |
3 tbs tomato paste |
juice and finely grated rind of one lime |
3 1/4 cups chicken stock |
salt and pepper |
shreds of lime rind for garnish |
Directions:
1. Cook onions and peppers gently in oil in saucepan covered with tight lid for 5 minutes,shake pan occasionally, until softened. 2. Stir in garlic then add chili with tomato paste. 3. Stir in half the stock and bring to a boil. 4. Cover pan and simmer for 10 minutes 5. Cool slightly then puree in a food processor or blender. 6. Return to pan then add remaining stock, lime rind and juice and seasoning. 7. Bring back to boil then serve immediately with a few curled lime rinds in each bowl. |
