This is a condiment my grandmother used to make. I was amazed at how good it was back then and how easy it is to make now. We use it sandwiches, with meats, with pakora style veggies, just about anything. It is really, really good with ham. Read more . We use it as a spread for crackers (with a little crumbled goat cheese like chevre). You will find something to dip into it...even a finger works well. Ingredients:
2 c granulated white sugar |
1 1/2 c cider vinegar |
1-2 teas red pepper flakes (more if you like the heat) |
1 teas salt |
1 large onion |
8-10 large red bell peppers |
Directions:
1. In a large pot add the vinegar, sugar, salt, and red pepper flakes. 2. Stem and de-seed the peppers 3. Fine chop or use a food processor to finely chop the onion and peppers 4. Add to the vinegar mix 5. Simmer over medium heat until thickened. This will take 30-45 minutes. 6. Let cool 7. Pack in pint jars and process or just store in the refrigerator. 8. This recipe is easily halved or doubled. |
