This recipe is from Frito-Lay as they would like you to use Tostitos to scoop the bruschetta. I have not made this so the yield and prep time are guesses. Ingredients:
3 whole tomatoes, diced |
1 small onion, diced |
1 cup pecans, crushed |
1 bunch basil, minced |
4 garlic cloves, minced |
1 cup extra virgin olive oil |
1 teaspoon kosher salt |
1 teaspoon pepper |
1 cup fresh roasted red pepper, cut into strips |
1 cup aged parmesan cheese |
Directions:
1. Mix all ingredients. 2. Scoop with Tostitos or spread on bread. |
