This is great with crudite, pita chips, or even chunks of crusty bread. Ingredients:
1 small red onion |
1 tsp. olive oil |
1 7 oz. jar roasted red peppers, drained |
1/2 tsp. dried basil, or 10 fresh leaves |
1 1/2 pkgs.(12 oz.) cream cheese, softened |
salt and pepper to taste |
Directions:
1. Preheat oven to 400 2. Quarter onion and put in small baking dish 3. Drizzle with olive oil 4. Salt and pepper to taste 5. Bake until soft, about 30 minutes 6. Let cool 7. In food processor, add onion, pepper, and basil leaves and puree 8. Add cream cheese and blend until combined 9. Put in bowl and chill a couple hours |
